I have to admit, I’m not usually one to make the recipes I’ve seen on cooking shows on The Food Network.
I wasn’t actually someone who even watched that channel before I had my baby because I assumed the recipes were all difficult and required crazy fancy ingredients I wouldn’t buy so there was no point in watching them.
Fast forward to having to nurse around the clock and having nothing decent on TV to watch during the day time. For those times when I didn’t feel like reading (my neck starts to kill me after a while), I turned on the TV and have recently gotten into watching The Food Network.
It was during one of these sessions that I came across this amazing Marsala Mushroom and Goat Cheese Flatbread from the Pioneer Woman (the featured image on this post is from their site).
It literally could not have been easier to make or more delicious.
I ended up making it for my family (and Eric’s parents) on Christmas Eve and then I made a second round — which I added Christmas ham to — a few days later since I still had the ingredients on hand.
This recipe was a total hit and one I will definitely be making again.
To make it, you simply saute mushrooms like a marsala and top a piece of Naan bread with pesto, the mushroom mixture, pesto, mozzarella, and goat cheese (I ended up using a truffle goat cheese that was heaven). My mouth is watering 🤤 as I type this.
