Fuss-Free Eggplant Parmesan Boats That Are Delicious and Easy to Make

As an Italian, I love a good parmesan anything. Eggplants, chicken, veal, you name it.

But, as you’ve probably experienced, it’s sooo tedious to make.

Whatever you decide to do as your base, you then have to bread it, fry it, and bake it with marinara sauce and mozzarella.

And this usually has to be done in multiple batches.

While the end result is delicious, it’s too time consuming and tedious to make.


That’s why I was pleasantly surprised to learn about these Eggplant Parmesan Boats (pictured in the featured image for this post) that I saw while watching The Kitchen on The Food Network.

I normally don’t watch or make anything from cooking shows but I have recently found myself doing both while nursing my newborn. 

And this is the second recipe (the first one being this ah-mazing Marsala Mushroom and Goat Cheese Flatbread) I’ve tried recently from The Food Network and I have to say, wow, it was worth it!

These Parm Boats are easy to make and ridiculously delicious.

Final product

They definitely helped me satisfy the craving in a healthier and easier way. There’s no breading, way more fiber, and the flavor is just as amazing.

They also took a fraction of the time to make #doublewin.

It also helped that Sprouts was having a sale on eggplants so it only cost me $2.30 for two and, with the sauce and cheese, the whole thing was less than $5 to make (I had sauce on hand).

I can safely say that these will definitely be in rotation for our family and I will be making them again.

This is how you save time with this recipe
Before I melted the cheese
I paired the boats with a baked chicken sausage, peppers, and onions
